With Valentine’s Day just around the corner, celebrate the season of love with a Cherubs Cup Cocktail. Of course, not just for Valentine’s, this cocktail brings together a few of my favourite things – strawberries, elderflower and fizz. Using a dry rose complements the strawberry and vodka or gin can be used as a base.

It’s sweet, refreshing and pretty – just right for a time where we all need a few of our favourite things!

Cherubs Cup Cocktail with strawberry, elderflower, vodka and sparkling wine

This recipe makes 1 serving. To make it, you will need:

  • 2 strawberries
  • Juice of ½ lemon (fresh)
  • 25 mls elderflower liqueur
  • 50 mls vodka
  • 75 mls Rose Sparkling Wine/Champagne or sparkling grape juice
  • Strawberry for garnish

 

Method:

  • Rinse the strawberries, cut off the green tops and slice each strawberry into three or four slices. 
  • To a cocktail shaker, add the strawberries and lemon juice.  Muddle together with the back of a spoon or cocktail muddler.
  • Add ice, elderflower liqueur and vodka to the cocktail shaker and shake well.
  • Strain into cocktail glasses filled with fresh ice.
  • Top with sparkling wine, garnish with a strawberry

Variations
Using citrus vodka builds on the delicate fruit flavour of this cocktail and is a great substitute for regular vodka.

Replacing the vodka with pink gin works well with the elderflower and strawberry, and is softer substitute than other gins.

If you prefer Champagne in your cocktails, Brut Champagne is a good choice for it’s dryness
