While we might not be able to embrace the bank holiday in the usual way, there’s no reason why we can’t celebrate at home with a cocktail or two.  Even better, host a virtual cocktail party with your friends, each making a different cocktail to try over the evening. 

This spring inspired cocktail uses a mixture of fresh ingredients and gin, and reminds me of sunny spring days in the garden.

The combination of aromatic rosemary and citrusy grapefruit pairs so well with the floral tones of a botanical gin.  You can find floral gins in most major supermarkets, but there’s no reason why you can’t just use your favourite gin for this delicious cocktail.

Begin with the simple syrup, then add the remaining ingredients.

Rosemary Simple Syrup

  • 3 sprigs fresh rosemary, rinsed
  • 1 cup sugar
  • 1 cup filtered water

Place rosemary sprigs in a resealable jar or bottle. In a small saucepan, combine the sugar and water and heat on low until the sugar has dissolved. Pour the sugar water over the rosemary sprigs and allow to cool.

You will need the following ingredients for the Rosemary Flora Greyhound – this recipe makes 1 serving:

  • 120 mls grapefruit juice
  • 30 mls rosemary syrup
  • 60 mls Gin
  • Sparkling water
  • Ice

Fill a small glass with ice. Add the grapefruit juice, rosemary syrup, and gin. Top up with sparkling water and garnish with grapefruit and rosemary.
