Equipment:
- A cocktail shaker to mix the ingredients.
- A strainer to help pour the drink smoothly into the glass.
- A jigger for measuring
Ingredients:
- 60mls pink grapefruit juice freshly squeezed, if possible
- 30mls vodka
- 6-8 fresh basil leaves plus extra for garnish
- Prosecco to top, about 90mls per glass
- Ice cubes to fill the glass
- 1 tsp simple syrup* or honey optional, for added sweetness
Method:
- Fill a wine glass or tall tumbler to the brim with ice cubes to keep your drink chilled and refreshing.
- Add 6-8 fresh basil leaves to cocktail shaker.
- Gently muddle basil leaves using a muddler or the back of a spoon to release the oils.
- Pour pink grapefruit juice, vodka, and simple syrup or honey (if using) into the shaker with the basil.
- Add a handful of ice to the shaker.
- Shake vigorously for 15-20 seconds to chill the mixture and blend the flavours.
- Strain the mixture into your prepared glass filled with ice.
- Slowly pour about 90mls of prosecco into the glass.
- Garnish with a fresh basil sprig or a thin slice of grapefruit on the rim for an elegant finishing touch.
*To make simple syrup:
- Add equal parts sugar and water (e.g one cup sugar, one cup water) to a small saucepan over a low heat for about 10 minutes
- Gently stir the mixture until it dissolves and forms a slightly runny syrup that’s about half the original volume.
- Once the syrup is ready, let it cool before adding to your cocktail mixture. If you’re making a large batch, strain it into a jar and seal the lid tightly. Pop it in the fridge, it will keep for about a month.
Top Tips
- Adjust the sweetness to your taste – if you like your drinks sweeter, you can add a bit more sugar syrup. Taste as you go to find the right balance for you.
- If you’re not a fan of vodka, try swapping it with gin.
- A splash of prosecco, Cava, or champagne will make this cocktail fizzy and bubbly. Use sparkling water instead if you’d prefer not to use sparkling wine.
